the wider the stream, the slower it flows.

Volume is not the correct word to use. Rather, cross-sectional area affects flow rate. The smaller the area, the faster the stream has to flow because more water must squeeze through a narrower opening.

the flow rate of fluids is equal to AV. A being the area and v being the volume. So if volume increases then flow rate decreases and vise versa

The flow rate (volume/time) is cross-sectional area times velocity. Higher flow rate with constant cross section = higher velocity. Larger cross section with constant flow rate = lower velocity. Larger cross section with constant velocity = higher flow rate (an unlikely occurrence in a given river at a given time).
