It's the Colorado river, but it's also due to plate tectonics. Two things happened in the SW USA: 1. The Colorado Plateau (northern AZ, southeastern UT, western CO, and northwestern NM) rose, and the Gulf of California opened, creating a depression for the Colorado River to flow into. The large elevation difference created a steep gradient, causing the river to cut deeply and quickly into the bedrock.

The good old Colorado River is to blame for that. All that carving and erosion created one of the greatest wonders to see.
